Tomatillo Salsa

The perfect addition for any Mexican dish, on baked fish or to just munch on with tortilla chips.


  • 1 1/2 LBS Tomatillos in husks20150128_185114
  • 2-3 Garlic Cloves
  • Handful of fresh Cilantro
  • 1 De-seeded and De-veined Jalapeño (Feel free to add another jalapeño  or try a different chili like a Serrano or Habanero if you like more heat)
  • The Zest of 1 Large Lime
  • The juice of 1 Large Lime
  • The Zest of 1 Orange
  • The juice of 1 Orange
  • 1/8 tsp. Oregano
  • Sea Salt & Pepper to taste

Husk the Tomatillos, clean and boil in salted water until the color starts to change and the tomatillos soften.  With a slotted spoon, dip out the tomatillos and put into a blender or vitamix.  Add to the blender the remaining ingredients and pulse the blender to the desired consistency.  Add a sprinkle of chopped cilantro to garnish and voila – SALSA
